Lentils With Spinach

This gluten-free recipe for lentils with spinach is a great way to get nutrients and fiber. Serve it as a side dish or as a main course over rice, with a salad.

Cook Time: :10
Ingredients:
  • 10 oz spinach, washed and drained
  • 2 garlic cloves, diced
  • 1/4 cup chili peppers, chopped
  • 1/4 tsp ginger
  • 1/4 tsp lemon juice
  • salt to taste
  • 1 cup lentils, cooked
  • 1 Tbsp olive oil
Preparation:
1. Heat the oil in a frying pan. Saute the garlic, peppers and ginger for a minute.

2. Add the spinach to the pan. Cover and cook for 2 minutes or until the spinach is wilted.

3. Add the cooked lentils and the lemon juice. Stir and cook for another half minute.

4. Add salt to taste, and serve over brown rice.
