Grab-and-Go Gluten-Free Meals for Your Freezer or Pantry

I never let having celiac disease keep me from having good gluten-free lunches at work! For those days when I don't have leftovers to bring for lunch, and I don't feel like going out to buy something, I like to keep these terrific ready-made gluten-free meals in my freezer or pantry to grab on my way out of the house in the morning.

These lunches would also be great for students, as long as they have access to a microwave oven.

If you can't find these in stores near you, they're all available online, from the manufacturer or vendors, or both.

These delicious frozen, single serving gluten-free burritos heat up in the microwave in minutes. I take mine out of my freezer in the morning and they are still frozen when I put them in the office freezer 90 minutes later. They come in five flavors, including two that are vegetarian and one that’s dairy-free.
Requires: a microwave oven and a freezer or ice-pack, plus utensils.

Amy’s Products Frozen Single-Serve Entrees

Amy’s has dozens of frozen gluten-free entrees that you can keep in the freezer at work and microwave when you want a warm, hearty lunch. Among my favorites: her lasagna (shown here), her baked ziti, her shepherd’s pie (also available in a low-sodium version, and her black bean enchilada with rice and pinto beans.

Thai Kitchen Noodle Carts

Named after the noodle cart vendors in Thailand, these are ready-to-microwave rice noodle meals. You just add water and the enclosed seasonings to the microwavable dish it comes in, and warm it up. A fork is included. They have four flavors, all gluten-free (pad thai, sesame, peanut, and garlic). Thai Kitchen products are generally found in the Asian/Ethnic/International Food Aisle.
Requires: a microwave oven and water.

My Own Meals
