The National Association of College & University Food Services were invited to tell about the resources available at their institutions for the gluten-free college student with
celiac disease. Below is information provided by Liz Khosravi, Associate Director of Campus Dining at
Washington State University in Pullman, Washington.
What advice would you give to a high school senior with celiac disease who is applying to college?
First contact the dietitian for advice about the foods served, then meet with the chefs.
What special accommodations would your school’s dining services be able to make to feed a student with celiac disease?
We cook foods in a clean environment on equipment that is only used for the student. We purchase certain foods that are required on this diet.
Are students allowed to have cooking appliances in the freshmen dorms (such microwaves, hotplates, or toaster ovens)?
No, but there are cooking facilities on most floors.
What special resources, if any, are available at your school for students with special dietary requirements?
We have a dietitian who works with the students and chefs who will cook the necessary foods.
