were invited to tell about the resources available at their institutions for the gluten-free college student with celiac disease
. Below is information provided by Timothy Dietzler, Director of Dining Services at Villanova University
in Villanova, Pennsylvania.
What advice would you give to a high school senior with celiac disease who is thinking of applying to your school?
Villanova Dining Services offers a varied menu with gluten-free products. We have a nutritionist on staff that will meet with you personally and guide you through the menus. We have several students on our meal plans that have celiac disease and they are enjoying their dining experience.
What special accommodations would your school’s dining services be able to make to feed a student with celiac disease?
We offer gluten free products in our dining halls and convenience stores. We bring in specific products that students enjoy eating.
Do the freshmen dorms have cooking facilities?
What special resources, if any, are available at your school for students with special dietary requirements?
We have a nutritionist on staff as well as a Registered Dietitian (RD). The Health and Wellness center has several RDs on staff to assist students with food allergies and intolerances.
