The National Association of College & University Food Services were invited to tell about the resources available at their institutions for the gluten-free college student with
celiac disease. Below is information provided by Cheryl Wiley, MS, RD/LD, Dining Services coordinator at the
University of Kansas in Lawrence.
What advice would you give to a high school senior with celiac disease who is applying to college?
Contact the director or assistant director of dining services or click on the dietitian link if the campus dining services has a website to ask those necessary questions and/or seek help. When you arrive at college, bring in a doctor's slip with details for your diet allergen-free plan and set up appointment with the dining manager where you will eat your meals.
What special accommodations would your school’s dining services be able to make to feed a student with celiac disease?
We are buying some gluten-free foods, and we prepare some foods without gluten. This year we will have a bigger selection of menu items for gluten-free diets.
Are students allowed to have cooking appliances in the freshmen dorms (such as microwaves, hotplates, toaster ovens, etc.)?
Yes, microwaves.
What special resources, if any, are available at your school for students with special dietary requirements?
Students can store items in our dining refrigerators/freezers if they don't have one in their room.
