University of Missouri And The Gluten-Free College Student

In June 2008, members of The National Association of College & University Food Services were invited to tell about the resources available at their institutions for the gluten-free college student with celiac disease. Below is information provided by Julaine Kiehn, Director [of Food Services] at the University of Missouri in Columbia.

What advice would you give to a high school senior with celiac disease who is thinking of applying to your school?

Please contact us well in advance so we can prepare for your arrival. We will ask you to meet with one of our Registered Dietitians and/or the manager of the dining facility where you are most likely to dine -- preferably during the summer before you arrive in the fall. We will work with you to determine foods that are safe for you to eat.

What special accommodations would your school’s dining services be able to make to feed a student with celiac disease or food allergies?

We work with the student to determine foods that are safe for her/him to eat. If needed, we will purchase gluten-free foods and make those available to the student in a special location in the dining facility.

Are students allowed to have cooking appliances in the freshmen dorms (such as microwaves, hotplates, toaster ovens, etc.)?

We allow appliances like refrigerators and microwaves but nothing with an element (because of the fire hazard).

What special resources, if any, are available at your school for students with special dietary requirements?

We have four Registered Dietitians who are available to meet with students with special dietary requirements.
