Tufts University And The Gluten-Free College Student

In June 2008, members of The National Association of College & University Food Services were invited to tell about the resources available at their institutions for the gluten-free college student with celiac disease. Below is information provided by Patricia Klos, Director of Dining and Business Services at Tufts University in Medford, Massachusetts.

What advice would you give to a high school senior with celiac disease who is applying to college?

Contact the campus dining services department in advance to discuss your specific needs. Many colleges are now aware of the challenges facing individuals with celiac disease and are able and happy to work with students to meet their nutritional needs.

What special accommodations would your school’s dining services be able to make to feed a student with celiac disease or food allergies?

We provide gluten-free alternatives to common foods that most people enjoy, and maintain appropriate separation on equipment and cooking utensils that must be kept gluten free as well, such as toasters, saute pans, etc. We also will source foods that may not be as common, but that a specific individual prefers, so that he will have access to adequate nutrition as well as foods he really likes.

Are students allowed to have cooking appliances in the freshmen dorms (such as microwaves, hotplates, toaster ovens, etc.)?

In some situations where students have multiple allergies, the university is able to place a first year student in non-typical first year housing (an apartment or suite with a kitchen) so that they can cook for themselves.

What special resources, if any, are available at your school for students with special dietary requirements?

Our staff nutritionist deals with all student on meal plans with special dietary needs, and I am willing to fund the foods they require as well as additional equipment as needed to separate the preparation of specific foods. We do not receive any special funding for these initiatives.
