In June 2008, members of The National Association of College & University Food Services were invited to tell about the resources available at their institutions for the gluten-free college student with celiac disease. Below is information provided by James Kainer, Manager, Purchasing and Menu Development at Texas Tech University in Lubbock, Texas.

What advice would you give to a high school senior with celiac disease who is thinking of applying to your school?

Make sure to specify on the Housing application that you have special dietary concerns. Ask if apartment-style living is available for incoming freshmen with special diets. Contact Hospitality Services and visit our Smart Choices website to discover all the gluten-free choices we offer.

What special accommodations would your school’s dining services be able to make to feed a student with celiac disease or food allergies?

We work with the individual to give access to food labels and ingredients of our recipes. Some of our locations will cook to order certain items that are gluten free.

Are students allowed to have cooking appliances in the freshmen dorms (such as microwaves, hotplates, toaster ovens, etc.)?

Yes, microwaves.

What special resources, if any, are available at your school for students with special dietary requirements?

Our website has many tips and ideas for students with food allergies. Student Health also can consult with the student on ways to eat healthy.
