The National Association of College & University Food Services were invited to tell about the resources available at their institutions for the gluten-free college student with
celiac disease. Below is information provided by Ruth Sullivan, Registered Dietitian and Nutrition Educator, Food Services at
Syracuse University in Syracuse, New York.
What advice would you give to a high school senior with celiac disease who is applying to college?
Get the name(s) of either the registered dietitians or kitchen managers at the college and call as soon as you know you will be attending that college. Be prepared to give a list of foods and brands you currently eat.
What special accommodations would your school’s dining services be able to make to feed a student with celiac disease?
Getting foods they need through purchase with gluten free vendors.
Preparing special items in a gluten-free environment.
Are students allowed to have cooking appliances in the freshmen dorms (such as microwaves, hotplates, toaster ovens, etc.)?
Yes, microwaves.
What special resources, if any, are available at your school for students with special dietary requirements?
Registered dietitians.
