In June 2008, members of The National Association of College & University Food Services were invited to tell about the resources available at their institutions for the gluten-free college student with celiac disease. Below is information provided by Cheri Supalla, Administrative Manager and Dietician at St. John's University in Queens, New York.

What advice would you give to a high school senior with celiac disease who is applying to your college?

The student would be instructed to meet with me and get familiar with the cooks in Dining Service. We can easily devise a plan for when the student is coming in to eat and what is available each day -- if nothing is gluten-free on the menu, then we will have a special entree made for the student. Sstore-bought gluten-free items are also in a special cooler for gluten-intolerant students.

Are students allowed to have cooking appliances in the freshmen dorms (such microwaves, hotplates, or toaster ovens)?

Microwaves and toasters, but not hotplates.

What special resources, if any, are available at your school for students with special dietary requirements?

Registered dietitian, knowledgeable cooks, gluten-free store-bought items.
