In June 2008, members of The National Association of College & University Food Services were invited to tell about the resources available at their institutions for the gluten-free college student with celiac disease. Below is information provided by Elissa Strassman, Registered Dietitian at the State University of New York (SUNY) in Oswego.

What advice would you give to a high school senior with celiac disease who is applying to college?

I would suggest that the student get in touch with Dining Services to notify them of their special dietary needs. It is important to know how the school handles these situations and if they are knowledgeable about cooking and preparing foods for students with special needs. It is important to get a hold of dining services before coming to school so the staff is prepared with foods the student enjoys to eat.

What special accommodations would your school’s dining services be able to make to feed a student with celiac disease or food allergies?

We purchase foods the student likes, and will prepare items not on the menu, because we believe everyone should be entitled to a hot meal.

Are students allowed to have cooking appliances in the freshmen dorms (such as microwaves, hotplates, toaster ovens, etc.)?

No.

What special resources, if any, are available at your school for students with special dietary requirements?

A registered dietitian.

Can you provide a contact number or email address for celiac students who want more information?
