The National Association of College & University Food Services were invited to tell about the resources available at their institutions for the gluten-free college student with
celiac disease. Below is information provided by Judy Runyon, Associate Director of Campus Dining at
Occidental College in Los Angeles, California.
What advice would you give to a high school senior with celiac disease who is applying to your college?
I would advise them to feel free to meet with me. I can explain all the things we currently do to help students follow their diet. I would let them know to feel comfortable to ask for things. Ninety percent of the gluten-free items that we carry are from student suggestions.
What special accommodations would your school’s dining services be able to make to feed a student with celiac disease?
We have added many gluten-free items for those that have that restriction. We also have a registered dietician who they are welcome to meet with to give them nutritional guidance. If available by our suppliers, we are also open to suggestions to carry more items that they desire.
Are students allowed to have cooking appliances in the freshmen dorms (such microwaves, hotplates, or toaster ovens)?
Microwaves only.
What special resources, if any, are available at your school for students with special dietary requirements?
We have a registered dietician available. We also have prepared a list of gluten-free items for the student to use as guidance. Students also are always welcome to contact me for suggestions or ingredient questions.
