In June 2008, members of The National Association of College & University Food Services were invited to tell about the resources available at their institutions for the gluten-free college student with celiac disease. Below is information provided by Jocie Antonelli, R.D, Manager of Nutrition and Safety at the University of Notre Dame in Notre Dame, Indiana.

What advice would you give to a high school senior with celiac disease who is thinking of applying to your school?

Celiac is a growing issue for us and I am sure all colleges. We have created a gluten-free room [stocked] with gluten-free items. We also make special meals for them.

Do the freshman dorms have cooking facilities?

They have kitchenettes.

What special resources, if any, are available at your school for students with special dietary requirements?

I individually work with all these students and coordinate meals for them with the dining halls and retail outlets.

How can people contact you for more information?
