In June 2008, members of The National Association of College & University Food Services were invited to tell about the resources available at their institutions for the gluten-free college student with celiac disease. Below is information provided by Michelle Netson, M.S., R.D., L.D., Administrative Dietitian at Kansas State University (KSU) in Manhattan, Kansas.

What advice would you give to a high school senior with celiac disease who is thinking of applying to your school?

At KSU, we are prepared to support your efforts in maintaining your diet through product availability and also the nutritional analysis of every recipe we serve. Each dining center has a Registered Dietitian on staff who can assist you in maintaining control of your dietary needs. We offer a wide variety of menu items at all meals which would allow you to make appropriate choices. Food choices and portions are unlimited.

What special accommodations would your school’s dining services be able to make to feed a student with celiac disease or food allergies?

Nutritional counseling with a Registered Dietitian
Gluten-free products made available to students
Nutritional analysis of every menu item served
Numerous menu selections and options at every meal served

Are students allowed to have cooking appliances in the freshmen dorms (such as microwaves, hotplates, toaster ovens, etc.)?

Yes.

What special resources, if any, are available at your school for students with special dietary requirements?

Each dining facility has a Registered Dietitian on staff. For students in the Residence Halls, consultations with the dietitians are unlimited and free of charge. Dietitians can coach the students with meal selections and help them to determine which menu items are appropriate selections to meet their dietary needs. Our daily menu is posted on the web which helps students predetermine which menu items they might want to select. Our nutritional analysis of our daily menu is also available via the web menu. Students living off campus may consult with a Registered Dietitian at the Student Health Center.
