The National Association of College & University Food Services were invited to tell about the resources available at their institutions for the gluten-free college student with
celiac disease. Below is information provided by Ernie Gionis, Director of Dining & Conference Services at
Indiana University Southeast in Albany, Indiana.
What advice would you give to a high school senior with celiac disease who is applying to college?
Make an appointment to meet with management of dining services to discuss specific needs, likes and dislikes.
What special accommodations would your school’s dining services be able to make to feed a student with celiac disease or food allergies?
We could purchase those items the student likes and are able to cook those items to-order at each meal period.
Are students allowed to have cooking appliances in the freshmen dorms (such as microwaves, hotplates, toaster ovens, etc.)?
We do not have mandatory meal plans. All housing units have full kitchens in them.
What special resources, if any, are available at your school for students with special dietary requirements?
They are able to meet with the chef or manager to arrange for special meals to be prepared.
