In June 2008, members of The National Association of College & University Food Services were invited to tell about the resources available at their institutions for the gluten-free college student with celiac disease. Below is information provided by Jody Horn, Director of University Dining at Eastern Illinois University in Charleston, Illinois.

What advice would you give to a high school senior with celiac disease who is applying to college?

Meet with the dining area and ask questions during college visitation days. See what they currently do and what they are willing to do to help.

What special accommodations would your school’s dining services be able to make to feed a student with celiac disease?

We provide counseling and guidance as well as gluten-free foods.

Are students allowed to have cooking appliances in the freshmen dorms (such microwaves, hotplates, or toaster ovens)?

Yes.

What special resources, if any, are available at your school for students with special dietary requirements?

We are always willing to work with our students to meet their special dietary needs.
