In June 2008, members of The National Association of College & University Food Services were invited to tell about the resources available at their institutions for the gluten-free college student with celiac disease. Below is information provided by Ingrid Bushwack, Director of Dining Services at Connecticut College in New London, Connecticut.

What advice would you give to a high school senior with celiac disease who is applying to college?

Meet with the Dining Services Department and talk with them about what they can do for you. Communication will ensure success!

What special accommodations would your school’s dining services be able to make to feed a student with celiac disease?

We work with students with celiac disease all the time. We provide special products for them as well as we will cook on a individual basis for them when needed.

Are students allowed to have cooking appliances in the freshmen dorms (such microwaves, hotplates, or toaster ovens)?

Some appliances are allowed such as microwaves and refrigerators.

What special resources, if any, are available at your school for students with special dietary requirements?

Special food products, one-on-one cooking, separate area with supplies for students with special requirements.

Can you provide a contact number (or email address) for celiac students who want more information?
