In June 2008, members of The National Association of College & University Food Services were invited to tell about the resources available at their institutions for the gluten-free college student with celiac disease. Below is information provided by Rebecca Loach, Food Service Menu Planner at Bob Jones University in Greenville, South Carolina.

What advice would you give to a high school senior with celiac disease who is applying to your college?

Learn all you can about this disease and bring some foods with you that you can keep in your dormitory.

What special accommodations would your school’s dining services be able to make to feed a student with celiac disease?

We keep a supply of a few wheat-free foods that are pre-cooked and individually frozen and packaged and are available where the students can get them to supplement meals which contain foods they cannot eat. We also meet with them and regularly email them with information about new items on the menu.

Are students allowed to have cooking appliances in the freshmen dorms (such microwaves, hotplates, or toaster ovens)?

There are certain appliances they are allowed to have, but they are limited because of electricity limits.

What special resources, if any, are available at your school for students with special dietary requirements?

We meet with them individually and counsel them throughout the year about what is available. We keep some foods that are individually prepared with no additives (meats are cooked in olive oil and water on a clean grill.) We have plain rice available at lunch and supper. We have an extensive salad bar and a good variety of fresh and canned fruits.
