Definition of Gliadin

Definition:

Gliadin belongs to a family of proteins, called prolamins, that are found in the cereal grains. Gliadin prolamins are among the components of the gluten protein in wheat.

Certain blood tests for celiac disease (an autoimmune disorder in which eating gluten results in damage to the small intestine) are designed to detect antibodies to gliadin.
