Xanthan Gum

Definition: Xanthan gum is natural carbohydrate produced by fermenting glucose with a tiny microorganism called Xanthomonas campestris. Small amounts of it are used in gluten-free recipes for bread and baked goods, to give the dough some of the sticky quality that is usually produced by gluten. A pinch of it in salad dressing will improve the suspension of vinegar and oil.
