That's what makes the growing number of restaurants with gluten-free menus such a boon for those of us following the gluten-free diet when a restaurant has a gluten-free menu, staff members usually have been trained on how to avoid cross-contamination and serve safe meals. At the very least, everyone working at the restaurant should know what gluten is and the basics of how to avoid it.
