Chicago-based pretzel company Kim & Scott's Gourmet Pretzels, known for its premium stuffed soft pretzels, has launched a gluten-free soft pretzel.
The pretzel, which Kim & Scott's says took two years to develop, can be ordered online at the company's website and also can be found in some Whole Foods stores.
The gluten-free pretzel includes sorghum, millet, quinoa, amaranth and teff along with rice flour.
Kim & Scott's manufactures the gluten-free pretzel on the same lines as its regular pretzels, but runs the gluten-free variety in the morning, prior to any gluten-containing pretzels, and thoroughly cleans the equipment according to allergy protocols, a company spokesperson told me.
In additon, Kim & Scott's protects the raw materials and even the hair nets and other clothing worn by workers from gluten cross-contamination by moving them out of the manufacturing area when gluten flours are in use.
An independent laboratory has tested Kim & Scott's gluten-free pretzels to contain less than 20 parts per million of gluten, according to the company.
Kim & Scott's gluten-free pretzels joins several other manufacturers' offerings, including some really tasty chocolate-covered pretzels, and some low-salt diet-friendly salt-free pretzels.
