Erin McKenna, owner of BabyCakes NYC on Manhattan's Lower East Side, is famous for her gluten-free, vegan muffins, cakes, brownies, cookies, pies, cobblers, and cupcakes.
Now Erin is sharing her recipes with the world in her brand-new cookbook BabyCakes NYC: Vegan, Gluten-Free, and (Mostly) Sugar-Free Recipes from New York’s Most Talked-About Bakery (Clarkson Potter/Publishers, New York, 2009).
Fortunately for all of us, Erin has graciously allowed me to reprint her recipe for gluten-free chocolate chip cookies and cookie sandwiches, along with a short excerpt from the book.
Update: May 9, 2009. I've learned that despite the words gluten-free in the book's title, a substantial portion of the recipes in this cookbook call for spelt. Spelt is NOT gluten-free. (The cookie recipe I link to here is perfectly safe, however.)
