Celiac Disease: Spotlight on The Dairy-Free Cooking Site

Last month I posted a poll asking readers "What Other Foods Are Problems For You?" Nearly 20% of those who responded said that lactose or casein (a protein in milk) were problems. For those of you who need to avoid both gluten and dairy products, I've found some delicious-looking recipes on About.com's Dairy-Free Cooking site that will fit the bill! All of the following are gluten-free and dairy free:

Could you write some more about milk proteins and lactose problems in celiac?
I to found out after 3 years that casein was a problem. Searching I found this study:

According to this post 36-48% people with celiac also have issues with casein. I happen to be one of them….

Volta et. al. have demonstrated that 36% to 48% of celiacs tested were also intolerant to milk protein. Borner et. al. have demonstrated sequence homology, from the N-terminal, between casein and gliadin.
