Gluten-Free Mexican Recipes For Cinco de Mayo
Friday May 2, 2008
Cinco de Mayo –- the fifth of May -– is a holiday that celebrates the culture of Mexico and commemorates the 1862 triumph of Mexican troops over the French army in Puebla. (Some people mistake Cinco de Mayo for Mexican Independence Day, which is celebrated in September.)

To help you celebrate Cinco de Mayo this weekend, I've compiled a round-up of mouthwatering gluten-free Mexican recipes from About.com's guides. Viva Mexico!
